I love this meal. I am all about cheap, fast and easy-peasy meals!
This one is super easy and fairly cheap and you get a lot of it!
First, lets talk about the ingredients you will need:
~One can of re-fried beans
~About 2-2 1/2 lbs chicken breasts (you could also use thighs, I just prefer breasts)
~1 small can of black olives
~1 large can of enchilada sauce, your preference
~A drizzle of cooking oil
~Large tortillas, 10-12
~Shredded cheese
~Green onions
~Tomatoes
~Sour Cream
1. Start by poaching the chicken breasts, cooling them (this could even be done the night before to speed up the process) and shredding. Place in a pan to brown with a drizzle of oil. Pre-heat oven to 375
2. Add the can of re-fried beans. Combine with the chicken. It may be hard to do, so add about 2 tablespoons sour cream and a little bit of enchilada sauce to make it easier to mix. Add olives.
3. Put about a 1/3 cup of mixture in a tortilla, add some cheese and roll up like a burrito. Place it in a cake pan. I use my trusty glass cake pan for this. Make sure you have sprayed or oiled the bottom to prevent sticking. Do this until you have a full pan.
4. Drizzle the enchiladas with the enchilada sauce, top with a generous helping of cheese. Top with aluminum foil.
5. While it bakes, (about 20 minutes or less depending on your oven), cube tomatoes and cut up green onions.
6. Bake until cheese is melted and it looks piping hot, with sauce boiling. Turn on broiler and remove foil. Allow to crisp up for just a few minutes. Keep an eye on it!
Pull your enchiladas, allow to cool for 5-10 minutes. Place on plate and top with green onions, tomatoes and sour cream! YUM!
TIP:
This is a very good way to use up leftover turkey at Thanksgiving! I just shred some bird and use it in place of the chicken. My husband loves it!

Prevagen Supplement is amazing!
I was in an accident when I was 17. I was hit by a car as I was crossing the street. The car was going 40 mph (speeding by the way) and I was hit head on. In the course of the accident, I was flung up onto the car's windshield (my body actually broke it) and I was chucked nearly 40 Ft from the car. I hit my head and was knocked unconscious. I stayed that way until I was in the ambulance where I would briefly gain consciousness for moments. It took me several hours to fully regain consciousness. I had also bruised and hurt my hip bones, broke my clavicle in half on one side, had black eyes, and road "rash" on my entire left side. I was lucky.
Needless to say, I do believe I have suffered some long term damage to my brain.
On top of that incident, I have also dealt with two bouts of meningitis, an infection in the fluid that surrounds the brain and is in the spinal cord as well as under-going ECT for depression.
I would say my brain has been through the ringer at only 30 years old.
Because of all this trauma, I do have some memory loss issues and well as some other cognitive issues. For instance, I have trouble recalling things, remembering things in both short and long term and understanding some concepts. I am what some people call, "a little slow" and it makes my day to day life rather frustrating at times.
I tried a new supplement that is supposed to help with these things**. It is called Prevagen.
Prevagen claims to improve memory, help you have a sharper mind and protects the memories you have**.
I was given a 30 day supply to try and I was admittedly skeptical. I can say that in my experience, I did actually notice a slight difference in memory recall after just 2 weeks*.
I was pleasantly surprised when after 30 days, I was more able to have a better short term memory recall*.
Now, I wouldn't say it is a cure, but it certainly helps your brain become healthier**.
I bet you are wondering what Prevagen is. Prevagen is a dietary supplement that contains only one active ingredient-Apoaequorin. This was first discovered in jellyfish and is now produced in labs. It helps the brain protect it's cells by slowing the cell death.
I love that Prevagen gave me noticeable results so fast and that it is completely vegetarian and cruelty free. No jellyfish are used to make the formula.
You can also find more information on Prevagen on their website. Be sure to follow them on Twitter and Become a fan on Facebook!
Prevagen is available on amazon for purchase as well as in Walgreens.
Prevagen is also willing to offer ONE of my readers a free bottle of a 30 day supply to try as well! Just enter on the Rafflecopter form below for your chance to try this awesome product!

Zoobies Giveaway! Come check it out!
Readers, I just know your little ones would love this giveaway so I teamed up with the Giveaway Gator to bring you this giveaway! How cute are Zoobies?!

Does your little one have a favorite "Luvey"? You know what I am talking about. The blanket or stuffed animal that your little one loves for years and can't be without? The one that is given to your now grown child when they have their baby, to be pulled out of a memory box, as you remember back to those times when your child couldn't bear to be parted with that blanket, even to hurriedly throw it in the wash?
Zoobies are the best of both worlds. A blanket and a stuffed animal, that they are sure to treasure from the moment the softness touches their little hands. Our granddaughter is 8 months, and as soon as we laid her down on the blanket, she squealed and grabbed the hippo in delight. The blanket conveniently tucks away into the animal to create a stuffed toy or pillow.

My BIG announcement!
If you have been reading my blog recently, you will see a little post on my breasts.
In this post I talk about how having large breasts has really given me a hard time and actually caused tremendous health issues.
Well, I have an announcement:
I will be consulting with a plastic surgeon on the 12th of July this year to talk about getting a reduction. This has been in the works for several years as I have been gathering medical evidence.
I needed to gather medical evidence for insurance purposes. I have seen several types of Doctors to address the many aspects of larger breast size in relation to my health.
~My regular provider, Sandy P. FNP has been so wonderful to me. She has gotten the ball rolling on all of this and she has been inspirational on moving forward. It is now a serious possibility because of her!
~ I saw an Orthopedic practitioner and she recommended I get a reduction because of the way my back is curving
~A chiropractor recommend it as well because of the way my neck is curving forward.
~I had a doctor several years back tell me that I needed to consider it because of skin issues I struggle with in that area.
~A Doctor of sleep medicine suggested it because I actually have trouble breathing at night because of their size
~A respiratory therapist and pulmonary doctor recommend it because I don't actually have asthma. I just have a difficult time breathing because of the weight of them on my chest.
Did you know that breast tissue weighs approximately 1 lb for each cup size? Since I am an H, that means mine weigh 10 lbs each! That is 20 lbs on my chest all day and all night. It's no wonder I have issues with breathing and that it is causing serious back, neck and shoulder issues.
I have to admit, although I am excited, I am scared. This is a major surgery with a very pain-filled recovery (or so I have heard).
Wish me luck on this journey. You know I will keep my blog readers informed!

You will find fun games that help your kiddo learn the tables.
If you have a younger kiddo, let them play educational games and watch videos on PBSkids.org
Kidscom.com is chock full of fun activities to do with your kids, games, SAFE chat for kids and educational resources!
Looking for some fun educational games on an easy to use website? You gotta check out funbrain then! Not only are there games, but there are also books and comics!

Julep Maven box!
Have you heard of Julep yet? Julep is a subscription month-to-month beauty box!
There are a couple different subscriptions that are available. What is fun, is, you can take a quiz to see which one fits you best!
I chose to review the BOHO Glam Maven box!
Inside I got two awesome nail colors, a set of toe separators, a welcome message, some awesome Pedi creme ("the best Pedi Creme ever") and some tips! It was all wrapped up in a box and a bow!
This would make a wonderful gift for any girly-girl in your life!
Let's take a peek inside my BOHO Glam Maven box:
I love the two nail colors I received! The pictures don't do them justice.
The first color was "Hayden", a bold and bright neon peach
The second color is "Courteney", a key-lime green
I was very impressed by both the color and constancy of the nail colors. I love how bright they were! Perfect for summer open toes. I also loved that they were a thick, quality formula. One of my biggest pet peeves with nail polish is the formulas that require you to put several top coats on before you achieve the color you desire. Julep Nail Vernis nail colors are not like that at all! One coat and I was done!
I also got "The Best Pedi Creme Ever!" The formula smells wonderful and clean. It is thick and glides on smooth with no greasy feeling after. I actually noticed a difference in my foot's softness after just a couple nightly applications. I love this stuff, as I believe it is the best Pedi Creme ever!
You can get all of this, and it changes monthly, for $19.99. Each box includes over $40 worth of stuff! What great savings! Plus you are able to get free shipping on all orders, enjoy 20%off items in the boutique and a wonderful referral program!
What is even more AMAZING is if you are a Saved By Grace reader you can get your first box for a SINGLE PENNY (1 CENT! is she for real?!) and free shipping and you can cancel at any time! Just go to Julep use promo code MAVENINTRO
Readers, Julep has offered to give one Maven Box away to ONE lucky reader! Make sure to enter on the form below!

Summer "Must have" list!
I am more than my breasts!
So, if you know me in 'real' life, you know that I am, as some say, blessed in the chest.
Only I don't consider it a blessing anymore.
Warning! This post is very personal and I talk about a private body part of mine. Please feel free to move on if you are sensitive to this subject.

photo via flickr by Mike Liche
I am large chested, and believe me when I say, it is cumbersome. To be exact, my breasts are a size 44 H.
There are several problems with having large breasts and I have experienced all of them, some on a very regular basis:
~Rashes under the breasts and in between in the 'cleavage'. These rashes burn, itch and ache.
~Yeast infections in between the breasts and under. This is extremely embarrassing and very painful and hard to prevent and rid yourself of.
~Back, neck and shoulder pain. Even headaches. I have actually physical deformities in my back and neck from carrying around the girls that you can see on an x-ray.
~Breathing difficulties. You may laugh, but it's true. I have a hard time breathing because of the weight of them both at night while I am sleeping and during the day. This was confirmed by a sleep study and blood tests as well as breathing tests to determine if it was caused by a lung disease. The 'asthma' I thought I had is not-I have no underlying lung issue..it is simply the weight of my breasts that causes asthma like symptoms and high levels of CO2 in my blood.
~Shoulder pain caused by the straps digging in. I have a permanent groove in my shoulder from wearing bras.
~I worry about one thing especially; my breasts make it difficult to feel for lumps because of their size and density
~besides the physical issues, there is the self esteem issues.
You may think to yourself, "How in the world could a woman with large breasts have self esteem issues about them?! Doesn't she feel great having what all women seem to want?"
This is how a lot of people react.
But to be frank, it's not what it's cracked up to be.
I can't fit in most women's tops unless I buy a significantly larger size than I should normally wear. As a teenager and young woman, the men all thought I was "easy" and the girls hated on me. It was assumed I was loose simply because of my chest size.
No matter what I wear, I have cleavage. This is terrible especially when you are as modest as I am.
People like to point out my chest size and I am often the butt of jokes.
People think they have a right to ask my chest size.
Men often stare at my breasts instead of my face when meeting me or talking to me. They think I don't notice, but I do.
Exercising is painful. Its not only painful because I am out of shape, but its nearly impossible to buy a supportive sports bra in my size. It physically hurts to have them unsupported while exercising.
Say goodbye to cute swimsuits, cute bras (in a reasonable price range), cute tops and dresses.
That is only a SHORT list of things I encounter that make me suffer from self esteem issues related to my chest size.
But all is not lost!
I have a 'BIG' announcement coming soon! Stay tuned!
Only I don't consider it a blessing anymore.
